  • 2 pounds small new potatoes (Yukon Gold or red bliss)
  • 1/2 cup pitted Kalamata olives, halved
  • 1/4 cup pitted green olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped fresh parsley
  • 2 tablespoons finely chopped fresh dill
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Wash the potatoes thoroughly and cut larger ones into halves or quarters.
  2. Place potatoes in a large pot, cover with cold water, add salt, and bring to a boil. Reduce heat and simmer until tender (15-20 minutes).
  3. Drain the potatoes and let them cool slightly.
  4. In a small bowl, whisk together olive oil, lemon juice, apple cider vinegar, Dijon mustard, minced garlic, salt, and pepper.
  5. In a large bowl, combine cooled potatoes with olives, feta cheese, parsley, and dill.
  6. Pour dressing over the potato mixture and gently toss until evenly coated.
  7. Taste and adjust seasoning if needed. Chill for at least 30 minutes before serving.
