  • 2 cups digestive cookies or graham crackers
  • ½ cup butter (melted)
  • ¼ teaspoon salt
  • 2 tablespoons powdered sugar
  • 3 cups fresh apple cider
  • Mulling spices
  • 3 cream cheese bricks (softened)
  • 1 cup brown sugar
  • ½ teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1 cup sour cream
  • ⅓ cup reduced apple cider
  • 1 teaspoon cinnamon
  • 3 large eggs
  • 2 tablespoons all-purpose flour

Instructions

  1. Reduce 3 cups of fresh apple cider with mulling spices in a pot over high heat until thickened (about 1 hour).
  2. Preheat oven to 350°F (175°C).
  3. For the crust, blend cookies with melted butter, salt, and powdered sugar; press into an 8” springform pan and bake for 10 minutes.
  4. In a mixer, beat softened cream cheese with brown sugar until smooth; add sour cream, vanilla extract, salt, cinnamon, and cooled reduced cider.
  5. Mix in eggs and flour until just combined; pour into the crust.
  6. Bake in a water bath for about 90 minutes or until edges are set but center is slightly wobbly.
  7. Cool gradually in the oven for half an hour before refrigerating overnight.
