  • 34 lbs turkey breast (bone-in or boneless)
  • 2 cups apple cider
  • 4 tbsp butter
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1/2 tsp cinnamon
  • Optional: fresh herbs and sliced apples for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and pat the turkey breast dry. Season generously with salt and pepper.
  2. In a skillet, melt 2 tbsp butter over medium-high heat. Sear the turkey breast on all sides until golden brown (about 3-4 minutes per side).
  3. Transfer the turkey to a roasting pan and add 1 cup of apple cider to keep it moist while roasting.
  4. In a saucepan, combine remaining apple cider, brown sugar, vinegar, mustard, garlic, cinnamon, and optional cloves. Simmer for about 10-15 minutes until thickened.
  5. Brush the glaze over the turkey every 15 minutes as it roasts for approximately 1.5 to 2 hours or until internal temperature reaches 165°F (74°C).
  6. Let rest for 10-15 minutes before carving and garnish with fresh herbs and apple slices.
