  • 1 cup apple cider, reduced to ¼ cup
  • ½ cup whole milk
  • ½ cup unsalted butter, softened (for buttercream)
  • 3 cups powdered sugar (for buttercream)
  • ¼ cup reduced apple cider (for buttercream)
  • 1 tsp vanilla extract (for buttercream)
  • Pinch of salt (for buttercream)
  • ½ cup caramel sauce (for filling)
  • Pinch of flaky sea salt (optional)

Instructions

  1. Reduce 1 cup of apple cider in a saucepan until it reaches ¼ cup. Let cool.
  2. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  3. In a bowl, mix flour, baking soda, baking powder, salt, and spices.
  4. In another bowl, beat softened butter and brown sugar until fluffy. Add egg and vanilla; mix well.
  5. Gradually combine the cooled apple cider reduction and dry ingredients alternately with milk.
  6. Drop tablespoons of batter onto baking sheets, spacing them 2 inches apart. Bake for 10-12 minutes until firm.
  7. For the buttercream, beat softened butter then gradually add powdered sugar and cooled apple cider reduction until smooth.
  8. Assemble by spreading buttercream on one cookie half, drizzling with caramel, and topping with another half.
