  • 1 large egg
  • 1 1/4 teaspoon vanilla extract
  • 1/2 cup diced apples
  • 1 1/4 cups flour (for batter)
  • 1/2 cup sugar (for batter)
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 teaspoon cinnamon (for batter)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. For the crumble topping, mix together flour, cold butter, white sugar, brown sugar, cinnamon, and salt in a bowl until crumbly.
  3. In another bowl, whisk together dry ingredients: flour, sugar, baking powder, salt, and cinnamon.
  4. In a large bowl, mix wet ingredients: milk, softened butter, sour cream, egg, and vanilla until smooth.
  5. Gradually combine dry ingredients with wet ingredients until just mixed; do not overmix.
  6. Gently fold in diced apples.
  7. Line muffin tins with liners and fill them almost to the top with batter.
  8. Generously sprinkle crumble topping over each muffin.
  9. Bake for about 18-20 minutes or until golden brown and springy when touched.
