  • 1/4 cup bread flour
  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 6 tablespoons unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream
  • 2 tablespoons apple butter

Instructions

  1. Prepare the apple filling by cooking diced apples with apple butter, sugar, water, lemon juice, cinnamon, vanilla extract, sea salt, and cornstarch until softened.
  2. Make the dough by combining tangzhong (water and bread flour), remaining bread flour, sugar, yeast, salt, milk, cream, egg, and vanilla; knead until smooth.
  3. Roll out the dough into a rectangle and spread softened butter over it.
  4. Spread the apple filling on top and sprinkle with cinnamon sugar before rolling tightly and slicing into pieces.
  5. Place in a greased dish to rise again before baking at 350°F (175°C) for about 30 minutes until golden brown.
  6. Prepare the cream cheese frosting by mixing together butter, cream cheese, powdered sugar, heavy cream, and apple butter until smooth; frost rolls while still warm.
