  • 8 oz cream cheese (softened, for frosting)
  • ¼ cup unsalted butter (softened, for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a standard muffin tin with paper liners.
  2. In a medium bowl, combine flour, brown sugar, oats, cinnamon, and salt. Cut in cold butter until you achieve coarse crumbs.
  3. Whisk together flour, baking powder, salt, cinnamon, and nutmeg in another bowl.
  4. In a large bowl, use an electric mixer to cream together softened butter and granulated sugar until light and fluffy—this usually takes about 3-4 minutes.
  5. Add eggs one at a time while mixing well after each addition. Then mix in vanilla extract.
  6. Gradually add the dry mixture into the wet ingredients while alternating with milk. Start and end with dry ingredients; mix on low speed just until combined.
  7. Gently fold diced apples into your batter using a rubber spatula.
  8. Divide the batter evenly among prepared muffin cups, filling each about two-thirds full.
  9. Generously sprinkle your chilled streusel topping over each cupcake.
  10. Bake for about 22-25 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow your cupcakes to cool in the pan for five minutes before transferring them to a wire rack for complete cooling.
  12. While waiting for your cupcakes to cool down fully, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar followed by vanilla extract, cinnamon, and salt until fluffy.
  13. Once cooled completely, pipe or spread your lovely cinnamon cream cheese frosting atop each cupcake.
