  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter (melted)
  • 2 large eggs
  • 1 cup milk (room temperature)
  • 1½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a bowl, mix together flour, brown sugar, granulated sugar, and cinnamon for the crumble topping. Add melted butter until clumps form; set aside.
  3. In another bowl, whisk together flour, baking powder, salt, and additional cinnamon.
  4. In a large bowl, cream together sugars and butter until fluffy. Beat in eggs, sour cream, and vanilla.
  5. Gradually combine dry ingredients with the wet mixture. Fold in diced apples gently.
  6. Fill muffin cups three-quarters full and generously sprinkle crumble on top.
  7. Bake for 20 minutes or until a toothpick comes out clean. Cool before serving.
