  • 300 g all-purpose flour
  • 60 g granulated sugar
  • 1 tsp salt
  • 220 g unsalted butter (cold, cut into cubes)
  • 110 g cold water
  • 1 kg apples (Pink Lady, Royal Gala, or Fuji)
  • 190 g brown sugar
  • 1¼ tsp ground cinnamon
  • 1¼ tbsp cornstarch
  • ¼ tsp salt
  • 2½ tbsp water
  • 5 tbsp almond flour (or other finely ground nuts)
  • 1 egg
  • 1 tbsp water
  • 3 tbsp brown sugar
  • Vanilla ice cream for serving

Instructions

  1. Prepare the crust by mixing flour, granulated sugar, and salt in a bowl. Cut in cold butter until crumbly. Gradually add cold water until dough forms. Chill for 30 minutes.
  2. For the filling, peel and slice apples. In a skillet, melt butter over medium heat and stir in apples, brown sugar, cinnamon, cornstarch, and salt until combined.
  3. Roll out half of the chilled dough into your pie dish. Fill with apple mixture and cover with another layer of rolled dough. Crimp edges to seal.
  4. Preheat oven to 180°C (350°F). Brush the top crust with an egg wash for color. Bake for about 80 minutes until golden brown.
  5. Let cool slightly before serving warm slices topped with vanilla ice cream.
