  • 5 cups Butternut Squash (peeled and cubed)
  • 1/2 cup Olive Oil
  • 2 pinches Kosher Salt
  • 1 pinch Red Pepper Flakes (optional)
  • 8 oz block Feta Cheese
  • 1 lb Pasta (like rotini or ditalini)
  • 10 leaves Fresh Sage (minced)
  • 3 cloves Garlic (finely minced)
  • 1 tbsp Hot Honey (or regular honey)
  • Fresh Cracked Black Pepper

Instructions

  1. Preheat oven to 400°F.
  2. Toss butternut squash with olive oil, salt, and pepper in a mixing bowl. Place in a baking dish with feta in the center. Drizzle feta with olive oil and red pepper flakes if desired. Bake for about 30 minutes.
  3. Stir the squash gently after 30 minutes, then increase oven temperature to 450°F and bake for another 5-10 minutes until feta is golden brown.
  4. Cook pasta according to package instructions until al dente. Reserve 2 cups of pasta water before draining.
  5. Combine roasted squash mixture with minced garlic, sage, honey, and cooked pasta in a large bowl. Stir in pasta water gradually until creamy.
  6. Season with additional salt and pepper as needed. Serve warm.
