  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2/3 cup mashed ripe banana (about 2 medium)
  • 1/2 cup plant-based yogurt (substituting sour cream)
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 3/4 cup graham cracker crumbs
  • 2/3 cup whole milk
  • 1 cup miniature chocolate chips, divided
  • 1 cup miniature vegan marshmallow bits, divided

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare your muffin pan with liners.
  2. In a bowl, mix melted butter and brown sugar until combined. Add egg, vanilla extract, mashed banana, and plant-based yogurt; mix until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and graham cracker crumbs.
  4. Gradually add dry ingredients to the wet mixture alternating with whole milk until just combined.
  5. Gently fold in three-quarters of the chocolate chips and marshmallow bits.
  6. Fill muffin liners two-thirds full and top with remaining chocolate chips and marshmallow bits.
  7. Bake for about 16 minutes or until golden brown. Cool in the pan for several minutes before transferring to a wire rack.
