  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small diced onion
  • 4 minced garlic cloves
  • 3 cups beef broth (low sodium)
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp butter

Instructions

  1. In a skillet over medium heat, melt 1 tablespoon of butter and sauté the diced onion for about 3 minutes until softened.
  2. Add ground beef; cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  3. Stir in minced garlic and cook for an additional minute.
  4. Add uncooked rice, beef broth, Italian seasoning, salt, and pepper; stir well.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for 18-20 minutes until rice is tender.
  6. Meanwhile, in a saucepan on low heat, melt remaining butter; mix in milk, Parmesan, and cheddar until smooth.
  7. Combine the cheese sauce with the beef and rice mixture; stir well.
  8. Cook uncovered for an additional couple of minutes before serving.
