- 1 cup uncooked long-grain white rice
- 1 lb ground beef
- 1 small diced onion
- 4 minced garlic cloves
- 3 cups beef broth (low sodium)
- Salt and pepper to taste
- 1 tsp Italian seasoning
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 3 tbsp butter
- In a skillet over medium heat, melt 1 tablespoon of butter and sauté the diced onion for about 3 minutes until softened.
- Add ground beef; cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- Stir in minced garlic and cook for an additional minute.
- Add uncooked rice, beef broth, Italian seasoning, salt, and pepper; stir well.
- Bring to a boil, then reduce heat to low and cover. Simmer for 18-20 minutes until rice is tender.
- Meanwhile, in a saucepan on low heat, melt remaining butter; mix in milk, Parmesan, and cheddar until smooth.
- Combine the cheese sauce with the beef and rice mixture; stir well.
- Cook uncovered for an additional couple of minutes before serving.
