  • 1/2 tsp baking soda

  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 3 oz cooking oil
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together the flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, whisk together the oil, eggs, sugar, vanilla extract, and pumpkin puree until well combined. Fold in 1 cup of chocolate chips.
  4. Gradually add the dry ingredients to the wet mixture and stir until just blended.
  5. Spray an 8" x 4" loaf pan with oil spray and pour in the batter. Top with remaining chocolate chips.
  6. Bake for about 50-60 minutes or until a toothpick inserted comes out clean.
