  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 5 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1/4 teaspoon lemon zest
  • 1/4 teaspoon kosher salt
  • 1 & 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1/2 teaspoon cardamom (optional)
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (for brushing on pie)
  • 1 tablespoon raw sugar (for topping pie)

Instructions

  1. Preheat oven to 425°F. Prepare your double crust.
  2. Zest and juice half a lemon. Peel and slice apples into thin pieces, tossing with lemon juice.
  3. In a skillet, mix apples with sugars, flour, salt, and spices. Cook on medium heat covered for about 20 minutes until softened.
  4. Stir in vanilla extract and cool filling completely.
