  • 3/4 cup granulated sugar
  • 5 tablespoons all-purpose flour
  • 1 teaspoon vanilla
  • 1/4 teaspoon lemon zest
  • Juice from half a lemon
  • 1/4 teaspoon kosher salt
  • 1 & 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1/2 teaspoon cardamom (optional)
  • 1 tablespoon milk (for brushing on pie)
  • 1 tablespoon raw sugar (for topping pie)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare apples by peeling and slicing them thinly. Toss slices with lemon juice and zest.
  3. In a skillet over medium heat, combine apples with sugars, flour, salt, and spices. Cook until fork-tender (about 20 minutes).
  4. Allow the filling to cool completely.
  5. Roll out your pie crusts; place one in a deep-dish pie pan.
  6. Fill with cooled apple mixture and top with the second crust. Crimp edges.
  7. Chill assembled pie for 20–30 minutes before baking.
  8. Brush with milk or egg wash, sprinkle with raw sugar, then bake for 15 minutes at 425°F.
  9. Lower temperature to 350°F (175°C) and continue baking for an additional 40–45 minutes until golden brown.
  10. Cool on a wire rack for at least four hours before slicing.
