  • 5 Tablespoons unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 Tablespoon cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 Tablespoons unsalted butter (melted and cooled)
  • 2 1/2 Tablespoon milk

Instructions

  1. Cream together unsalted butter, granulated sugar, and light brown sugar until light and fluffy.
  2. Add room temperature eggs and vanilla extract; mix until combined.
  3. In a separate bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and kosher salt; add to wet ingredients gradually.
  4. Chill the dough in the refrigerator for one hour.
  5. Prepare the filling by mixing softened butter, light brown sugar, cinnamon, and cake flour until smooth.
  6. Scoop chilled dough into portions, create wells to fill with cinnamon mixture, and seal with more dough.
  7. Bake at 350°F (175°C) for 11-13 minutes until set around edges.
  8. Cool before icing with a glaze made of powdered sugar, melted butter, milk, and cinnamon.
