- 1 1/2 pounds butternut squash (peeled, seeded, cubed)
- 2 gala apples (peeled, cored, diced)
- 1 tablespoon cinnamon
- 1 teaspoon vanilla extract
- 2 tablespoons brown sugar (or honey)
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup raisins
- 1/4 cup pecans (or walnuts)
- 1/4 cup dried cranberries
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the cubed butternut squash, diced apples, cinnamon, vanilla extract, and brown sugar.
- Season with salt and black pepper; mix well.
- Pour the mixture into a baking dish and dot with chopped butter.
- Cover and bake for 15 minutes.
- Add raisins, cranberries, and nuts; stir gently to combine.
- Cover again and bake for another 15 minutes or until tender and golden brown.
