  • 1/2 cup granulated sugar

  • 1 tsp vanilla extract
  • 3 medium Granny Smith apples (peeled and diced)
  • 2 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (cold and cubed)
  • 1/4 cup chopped pecans (optional)
  • 1 cup granulated sugar (for caramel)
  • 1/4 cup water (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 2 tbsp unsalted butter (for caramel)
  • 1/4 tsp salt (for caramel)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, granulated sugar, and cinnamon; press into the bottom of the prepared pan.
  3. Beat softened cream cheese with granulated sugar until smooth; add eggs one at a time and stir in vanilla extract.
  4. Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg; spread over the cheesecake layer.
  5. Bake for about 45 minutes or until set; cool completely before cutting into squares.
  6. For caramel sauce, combine granulated sugar and water in a saucepan over medium heat until golden brown; remove from heat and stir in heavy cream, butter, and salt until smooth.
