  • 2 large yellow onions
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 cup shredded Gruyere cheese
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Slice the yellow onions thinly. In a skillet, melt the butter and olive oil over medium heat.
  2. Add the onions and a pinch of salt; cook slowly for about 30–40 minutes until golden brown and caramelized.
  3. In a bowl, blend the softened cream cheese and sour cream until smooth.
  4. Stir in garlic, caramelized onions, thyme (if using), salt, pepper, and most of the Gruyere cheese.
  5. Transfer to a baking dish and top with remaining Gruyere. Bake at 375°F (190°C) for about 20–25 minutes until bubbly and golden.
  6. Garnish with chopped chives before serving warm with crackers or sliced baguette.
