  • 2 large yellow onions, thinly sliced
  • 1 sheet puff pastry, thawed

  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden and tender.
  2. While the squash roasts, heat olive oil in a pan over medium-low heat. Add sliced onions and cook for 30–40 minutes until golden brown.
  3. Roll out puff pastry on a parchment-lined baking sheet, score a border around the edge, and prick the center with a fork. Pre-bake for about 10 minutes.
  4. Spread caramelized onions over the pre-baked pastry. Top with roasted squash and cheese. Bake for another 15–20 minutes until golden brown.
  5. Allow to cool slightly before slicing. Serve warm or at room temperature.
