  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon allspice

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
  3. Mix in pumpkin purée, egg yolk, and vanilla extract until smooth.
  4. In a separate bowl, whisk together flour, baking soda, salt, and spices.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Chill dough for at least 30 minutes.
  7. Scoop tablespoon-sized balls onto prepared baking sheets.
  8. Bake for 10–12 minutes until edges are set but centers remain soft.
  9. Cool on baking sheet for about 5 minutes before transferring to a wire rack.
