  • 1 (20 ounce) package refrigerated cheese tortellini
  • 8 ounces cremini mushrooms (sliced)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 tablespoon fresh sage (chopped)
  • 1 clove garlic (minced)
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. Boil water in a large pot and cook the cheese tortellini according to package instructions until tender.
  2. While cooking, slice the mushrooms and chop the fresh sage.
  3. In a skillet over medium-high heat, melt 1 tablespoon of butter with olive oil. Add chopped sage and cook for about 1 minute until crispy; set aside.
  4. In the same skillet, add another tablespoon of butter along with sliced mushrooms and minced garlic. Sauté for about five minutes until browned.
  5. Drain the tortellini and combine it with sautéed mushrooms in the skillet. Toss in remaining butter, parmesan cheese, and crispy sage; mix well. Season with salt and pepper before serving hot.
