  • 1 lb thinly sliced beef steak (ribeye or sirloin)
  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cups milk
  • 1 cup shredded provolone cheese
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the cheese tortellini according to package instructions; set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté onion and green bell pepper until soft and caramelized (about 5-7 minutes).
  3. Add the sliced beef to the skillet, seasoning with Italian seasoning, salt, and pepper. Cook until browned on all sides (about 5 minutes).
  4. In another saucepan, melt butter over medium heat and whisk in flour until smooth. Gradually add milk, stirring until thickened (about 5 minutes). Stir in shredded provolone cheese until melted.
  5. Combine cooked tortellini with sautéed beef and veggies; pour creamy sauce over everything and mix gently.
  6. Allow to simmer for a couple of minutes before serving warm.
