  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub and dry the russet potatoes; prick them with a fork.
  3. Rub each potato with olive oil and sprinkle with salt and pepper.
  4. Bake on a baking sheet for about 45 minutes until tender.
  5. While baking, cook ground beef in a skillet until browned; drain excess fat.
  6. Stir in taco seasoning with water according to packet instructions; simmer for five minutes.
  7. Cut a slit in the baked potatoes and fill them with the beef mixture and cheese.
  8. Return to the oven for five minutes until cheese is melted.
