  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1 tsp dried thyme or Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your baking dish.
  2. Heat olive oil in a skillet over medium heat. Season chicken breasts with salt, pepper, and thyme; sear for 5–6 minutes per side until golden brown. Set aside.
  3. In the same skillet, sauté garlic for one minute before adding mushrooms; cook until softened. Stir in spinach until wilted.
  4. Pour in heavy cream and broth; simmer for 3–4 minutes until slightly thickened.
  5. Assemble by placing chicken in a baking dish and pouring the creamy sauce on top; sprinkle with cheeses.
  6. Bake for 15–20 minutes until cheese is bubbly and chicken is cooked through.
  7. Garnish with fresh parsley if desired and serve warm.
