  • 1 lb ground beef (80% lean)
  • 2 cups macaroni (uncooked)
  • 1 small onion (diced)
  • ½ cup bell pepper (diced)
  • 3 cloves garlic (diced)
  • 1 packet chili seasoning mix
  • 8 oz tomato sauce
  • 1 can diced tomatoes (14.5 oz, undrained)
  • ½ cup chicken broth
  • 1½ cups cheddar cheese (shredded)

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add diced onion, bell pepper, and garlic; sauté for about 3-4 minutes until softened.
  3. Stir in chili seasoning mix, tomato paste, tomato sauce, diced tomatoes, chicken broth, and drained kidney beans. Simmer for 10 minutes.
  4. In a separate saucepan, melt butter over medium heat; whisk in flour until smooth. Gradually add heavy cream and milk while whisking until thickened. Mix in mustard powder, onion powder, salt, pepper, and hot sauce.
  5. Combine cooked macaroni with cheese sauce and then stir in the chili mixture.
  6. Transfer to a baking dish, top with shredded cheddar cheese, and bake at 350°F for 20-25 minutes until bubbly.
