  • 2¼ cups vanilla wafer crumbs
  • ¼ cup brown sugar
  • ½ cup unsalted butter (melted)
  • 1 cup mascarpone cheese
  • ½ cup confectioner’s sugar
  • 1½ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 23 tsp lemon zest
  • 1 cup whole milk ricotta cheese
  • ¾ cup heavy whipping cream
  • 1⅓ cups mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine vanilla wafer crumbs, brown sugar, and melted butter. Press the mixture into a pie dish and bake for about 10 minutes until golden brown. Let cool.
  2. In a large mixing bowl, blend mascarpone cheese, confectioner’s sugar, vanilla extract, ground cinnamon, and lemon zest until smooth. Gently fold in ricotta cheese.
  3. Whip heavy cream until stiff peaks form and then fold into the cheese mixture carefully.
  4. Stir in one cup of mini chocolate chips and pour the filling into the cooled crust. Smooth the top and sprinkle remaining chocolate chips on top.
  5. Cover with plastic wrap and refrigerate for at least 8 hours before serving.
