  • 23 tbsp milk (dairy or non-dairy)
  • 1/4 cup mini chocolate chips (plus extra for topping)
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup milk chocolate chips
  • 1 tsp coconut oil (or vegetable oil)

Instructions

  1. In a medium bowl, whisk together the almond flour, protein powder, and salt.
  2. In another bowl, combine cashew butter, milk, honey or maple syrup, and vanilla extract until smooth.
  3. Mix the wet ingredients into the dry ingredients until well combined.
  4. Fold in mini chocolate chips gently to maintain their shape.
  5. Adjust consistency with additional milk if needed.
  6. Roll into 1-inch balls and place on parchment paper.
  7. Chill in the refrigerator for at least 30 minutes to firm up.
  8. Melt chocolate chips and coconut oil; dip each ball in the mixture.
  9. Place back on parchment paper and sprinkle with extra mini chocolate chips.
  10. Refrigerate again until set.
