  • 1/2 cup light brown sugar (packed)
  • 11/2 teaspoons ground cinnamon
  • 1 large apple (peeled, cored, and chopped into small pieces)
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 3/4 cups confectioners’ sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Beat softened butter, granulated sugar, and vanilla until creamy. Add eggs one at a time.
  4. Gradually mix in dry ingredients alternating with milk until combined.
  5. In another bowl, toss chopped apples with brown sugar and cinnamon.
  6. Layer half the batter in the pan, followed by half the apple mixture; swirl lightly. Repeat layers.
  7. Bake for 45-55 minutes until a toothpick comes out clean.
