  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 and 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 3 tablespoons unsalted butter, melted (for topping)
  • 1/3 cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or nonstick spray.
  2. In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix together pumpkin puree, brown sugar, granulated sugar, eggs, vegetable oil, vanilla extract, and milk until smooth.
  4. Combine wet ingredients into dry ingredients and stir gently until just mixed; do not overmix.
  5. Fill muffin cups three-fourths full and bake for 18–22 minutes until a toothpick comes out clean.
  6. For topping, melt butter and mix granulated sugar with cinnamon. Dip muffin tops in melted butter then roll in cinnamon sugar.
  7. Serve warm or cool on a wire rack.
