  • 45 pound turkey breast, bone-in, skin-on
  • 1/2 cup unsalted butter, softened
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, quartered
  • 1 lemon, sliced
  • 1 orange, sliced
  • 1/2 cup chicken broth

Instructions

  1. Preheat oven to 350°F (175°C). Pat the turkey breast dry and loosen the skin.
  2. In a bowl, combine softened butter, lemon zest, orange zest, rosemary, thyme, sage, garlic, salt, and pepper.
  3. Spread half of the herb butter mixture under the skin and rub the remaining over the outside of the turkey. Stuff onion quarters and citrus slices inside the cavity.
  4. Place turkey in a roasting pan with chicken broth at the bottom. Roast for about 1 hour and 40 minutes or until internal temperature reaches 165°F (75°C), basting occasionally.
  5. Let rest for 15-20 minutes before carving.
