  • 3 1/2 lbs beef chuck, cut into 2" pieces
  • 4 tablespoons unsalted butter
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 cups apple vinegar (preferably bold)
  • 2 cups beef stock
  • 10 oz frozen pearl onions, defrosted and drained
  • 16 oz cremini mushrooms, quartered
  • Fresh thyme and bay leaves for seasoning

Instructions

  1. Preheat your oven to 350 F.
  2. In a Dutch oven over medium-low heat, melt 2 tablespoons of butter and sauté onions and carrots for about 3 minutes. Add garlic and tomato paste; cook for another minute.
  3. Season beef with salt and pepper. Increase heat to medium-high and sear the beef until browned on all sides; remove from pot.
  4. Stir in flour with remaining butter, then add apple vinegar scraping up browned bits. Pour in beef stock; return beef along with thyme and bay leaves.
  5. Cover tightly and bake in the oven for 2 1/2 hours.
  6. Sauté mushrooms in a skillet until golden brown. Add pearl onions until browned.
  7. Combine sautéed veggies into the stew and return to the oven for an additional 45-60 minutes.
