  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed (divided)
  • 2 (3.4 oz) boxes of instant coconut cream pudding mix
  • 3 cups half-and-half
  • 1 cup sweetened shredded coconut, toasted

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press into a 9×13-inch dish and bake for 10 minutes.
  2. In another bowl, beat softened cream cheese and powdered sugar until smooth. Stir in coconut extract and fold in one container of Cool Whip.
  3. In a separate bowl, whisk pudding mix with half-and-half until thickened. Pour over the cream layer.
  4. Spread remaining Cool Whip on top and sprinkle with toasted shredded coconut.
  5. Cover and refrigerate for at least 6 hours or overnight before serving.
