  • 1 1/2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder

  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons coconut oil
  • 1/2 teaspoon peppermint extract (for coating)

Instructions

  1. Cream together the unsalted butter and granulated sugar until light and fluffy.
  2. Mix in the vanilla and peppermint extracts.
  3. Sift in the flour, cocoa powder, and salt; combine to form a dough.
  4. Roll out the dough between parchment paper to about 1/4 inch thick and chill for an hour.
  5. Preheat oven to 350°F (175°C). Cut out round shapes from chilled dough and bake for 10–12 minutes.
  6. Allow cookies to cool completely on a wire rack.
  7. Melt chocolate chips with coconut oil until smooth, stir in additional peppermint extract, then coat each cookie.
  8. Chill cookies in the fridge until the chocolate sets.
