  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté diced onion and bell pepper for 3–4 minutes until soft.
  3. Add chopped spinach and cook until wilted, about 2–3 minutes. Season with garlic powder, salt, and pepper before removing from heat.
  4. In a large bowl, whisk together eggs, milk, and cottage cheese until smooth. Stir in Italian seasoning along with salt and pepper.
  5. Fold in shredded cheese and sautéed vegetables until well combined.
  6. Grease a 9-inch pie dish, pour in the mixture, and spread evenly.
  7. Bake for 40–45 minutes until golden brown and set in the center.
  8. Let cool for 5–10 minutes before slicing into wedges to serve.
