  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, heat olive oil. Sauté diced onion and bell pepper until softened (3–4 minutes).
  3. Stir in chopped spinach and cook until wilted (2–3 minutes).
  4. In a large bowl, whisk together eggs, milk, and cottage cheese until smooth. Add Italian seasoning, salt, and pepper.
  5. Fold in sautéed vegetables along with shredded cheese into the egg mixture.
  6. Pour the mixture into a greased 9-inch pie dish. Bake for 40–45 minutes or until golden brown on top.
  7. Allow to cool for 5–10 minutes before slicing.
