- 15.5 oz black beans, drained and rinsed
- 15.5 oz black-eyed peas, drained and rinsed
- 15 oz sweet corn, drained
- 1 cup fresh cilantro, chopped
- ½ cup red bell pepper, diced
- ½ cup orange bell pepper, diced
- ½ cup red onion, diced
- 1 tsp chili powder
- ½ tsp kosher salt
- ¼ cup granulated sugar
- ½ cup olive oil
- ⅓ cup white apple vinegar
- 1 tbsp fresh lime juice
- ¼ tsp garlic powder
- Prepare the ingredients: Drain and rinse the black beans and black-eyed peas.
- Mix the veggies: In a large bowl, combine the beans, corn, cilantro, red bell pepper, orange bell pepper, and red onion.
