  • 1 cup softened butter
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup old-fashioned oats
  • 1 cup corn flakes
  • 1 cup chopped and toasted pecans (or nuts of choice)
  • 1/2 cup coconut flakes
  • 6 oz peanut butter chips
  • 6 oz semi-sweet chocolate chips

Instructions

  1. Toast the pecans in a dry skillet over medium heat for about 3–5 minutes until fragrant.
  2. In a large bowl, cream the softened butter until light and fluffy.
  3. Add both sugars to the butter and beat until well combined.
  4. Mix in the eggs and vanilla extract until fully integrated.
  5. Combine flour with salt, baking powder, and baking soda; gradually mix into the wet ingredients.
  6. Gently fold in oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips.
  7. Chill the dough in the refrigerator for at least an hour.
  8. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  9. Scoop out generous dough balls onto prepared sheets, leaving space between each.
  10. Bake for 12–14 minutes until golden around the edges but soft in the center.
