  • 1 small white onion, peeled and diced
  • 1 bay leaf
  • 1.5 tablespoons Old Bay seasoning

  • 2 large handfuls of kale, roughly chopped

Instructions

  1. Sauté onions, carrots, celery, and garlic in a large pot over medium heat until softened.
  2. Add mushrooms and sweet potatoes; stir in wild rice, vegetable stock, bay leaf, Old Bay seasoning, and coconut milk.
  3. Bring to a gentle boil; reduce heat to low and simmer for about 45 minutes.
  4. Remove the bay leaf; fold in chopped kale until wilted.
