  • 3 cups shredded cooked chicken
  • 1 can (4 ounces) diced green chiles
  • 2 cups shredded Monterey Jack cheese, divided
  • 8 flour tortillas (8-inch)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup sour cream

Instructions

  1. Prepare the filling by mixing softened cream cheese, shredded chicken, diced green chiles, 1 cup of Monterey Jack cheese, garlic powder, onion powder, and cumin in a bowl until well combined.
  2. Spoon the filling into each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  3. Make the sauce by melting butter in a saucepan and stirring in flour to form a roux. Gradually add chicken broth and cook until thickened; then stir in sour cream and remaining green chiles.
  4. Pour sauce over enchiladas and sprinkle with remaining cheese.
  5. Bake uncovered at 350°F (175°C) for about 25 minutes until bubbly and golden.
  6. Let cool slightly before serving.
