  • 1 cup pumpkin puree
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup coconut oil (liquid state)
  • 1/4 cup sour cream (or Greek yogurt)
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch salt (optional and to taste)
  • For the cream cheese filling: 1 large egg, 4 ounces softened cream cheese, 1/4 cup sugar, and 3 tablespoons flour

Instructions

  1. Preheat oven to 350°F and grease a loaf pan.
  2. In a large bowl, mix pumpkin puree, sugars, coconut oil, sour cream, egg, vanilla, and spices until combined. Gently fold in flour, baking powder, baking soda until just mixed.
  3. Pour two-thirds of the batter into the prepared pan.
  4. In another bowl, combine cream cheese filling ingredients until smooth. Spread over the batter in the pan.
  5. Top with remaining batter and bake for about 48 minutes until golden brown and set.
  6. Cool for 15 minutes in the pan before transferring to a wire rack.
