  • 11/2 lbs Little Potatoes Company White Creamer potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Poke each potato with a fork, then microwave for 8 minutes, flipping halfway through.
  3. Toss the tender potatoes in olive oil, salt, and pepper until evenly coated.
  4. Place on the baking sheet and gently smash each potato until about 3/8" thick.
  5. Bake for 6 minutes, flip, then bake for another 6 minutes until golden brown and crispy.
  6. Remove from the oven and garnish with chopped parsley before serving warm.
