Creamy Mushroom & Spinach Stuffed Pastry Bites are the perfect combination of flaky pastry and savory filling that will steal the spotlight at any gathering.   • 1 sheet puff pastry, thawed
  • 200g mushrooms, finely chopped
  • 150g fresh spinach
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 100g cheese (mozzarella or cheddar), grated
  • 2 tablespoons cream cheese
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté onions and garlic until translucent.
  3. Add chopped mushrooms and cook until softened.
  4. Incorporate fresh spinach and season with salt and pepper until wilted.
  5. Remove from heat and mix in grated cheese and cream cheese until well combined.
  6. Roll out puff pastry on a floured surface and cut into 24 squares.
  7. Place about a teaspoon of filling in each square's center.
  8. Fold over to seal the edges firmly.
  9. Brush the tops with beaten egg for a golden finish.
  10. Bake on a parchment-lined baking sheet for 20–25 minutes or until golden brown.
