  • 2 cloves garlic (minced)
  • 1 tablespoon all-purpose flour
  • 1 cup whole milk (or half and half)
  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F and lightly grease a medium ceramic baking dish.
  2. Slice Yukon gold potatoes thinly using a mandolin or sharp knife.
  3. In a pot over medium heat, melt butter with minced garlic until fragrant. Stir in flour to create a roux and cook for 1-2 minutes. Gradually whisk in whole milk until thickened.
  4. Remove from heat and stir in Parmesan cheese, thyme, salt, and pepper until smooth.
  5. In a large bowl, combine sliced potatoes with the sauce and toss to coat evenly.
  6. Arrange potato slices upright in the baking dish and pour any remaining sauce on top.
  7. Bake covered with foil for 30 minutes, then uncover and bake for an additional 30 minutes until golden brown.
