  • ½ cup flour
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 2 tablespoons water (or milk)
  • ⅔ cup shredded sweetened coconut flakes
  • ⅔ cup panko bread crumbs
  • Oil for frying (or cooking spray for baking)
  • Sea salt flakes (for garnish, optional)

Instructions

  1. Prepare the coatings: In four shallow bowls, mix flour with chili powder, salt, and pepper in one; whisk eggs and water in another; place coconut flakes in the third; and panko breadcrumbs in the fourth.
  2. Coat the chicken: Dredge each chicken strip in the flour mixture, dip it in the egg wash, then roll it in coconut flakes followed by panko.
  3. Fry or bake: For frying, heat oil in a skillet over medium heat and fry tenders for about 2-3 minutes on each side until golden brown. For baking, preheat oven to 400°F (200°C), place coated tenders on a greased baking sheet, lightly spray with cooking oil, and bake for 15-20 minutes until cooked through.
  4. Cool and serve: Drain cooked tenders on a wire rack over paper towels. Optionally sprinkle with sea salt and serve warm with sweet chili sauce.
