  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese

  • 1 large egg
  • ¼ cup breadcrumbs (regular or Panko)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • Vegetable oil for frying or for baking

Instructions

  1. Prepare the corn by draining canned corn or thawing and drying frozen corn.
  2. In a large mixing bowl, whisk the egg until smooth.
  3. Combine flour, both cheeses, breadcrumbs, and seasonings in the bowl with the egg; mix well.
  4. Fold in the prepared corn until evenly distributed.
  5. Shape the mixture into small balls or discs.
  6. For frying: Heat oil in a pan to 350°F – 375°F and fry bites until golden brown (about 2-3 minutes per side). For baking: Preheat oven to 400°F and bake for 15-20 minutes, flipping halfway through.
  7. Drain excess oil if frying and allow to cool slightly before serving.
