  • 67 medium Yukon Gold potatoes
  • ½ white or yellow onion
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • Salt and black pepper
  • ½ cup Gruyere cheese (or more cheddar)
  • ¼ cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spray a baking dish with nonstick spray. Layer sliced potatoes and onions in the dish.
  3. In a saucepan, melt the butter over medium heat. Whisk in flour, then gradually add almond milk, stirring until smooth.
  4. Bring the mixture to a simmer, add cheddar cheese, garlic powder, salt, and pepper; stir until melted.
  5. Pour the cheese sauce over the potatoes and onions.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil, add Gruyere and Parmesan on top, then bake uncovered for an additional 30-45 minutes until golden brown.
