  • 2 cups powdered sugar

  • 23 tablespoons heavy cream or milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, mix melted butter with brown and granulated sugars until smooth.
  4. Beat in eggs one at a time followed by vanilla extract until well combined.
  5. Gently fold in dry ingredients until just combined.
  6. Stir in grated carrots evenly into the batter.
  7. Pour batter into a greased pan and smooth the top.
  8. Bake for 25–30 minutes or until a toothpick comes out clean.
  9. Let cool completely before frosting.
  10. For the frosting, beat cream cheese until smooth, gradually adding powdered sugar and mixing well.
  11. Add vanilla and enough cream/milk to achieve desired consistency; frost cooled bars generously.
