  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2 large eggs
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1/4 cup canola oil
  • 3/4 cup light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups packed shredded zucchini
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and sea salt.
  3. In a larger bowl, mix eggs, melted butter, oil, brown sugar, and vanilla extract until smooth.
  4. Gently combine dry ingredients with wet ingredients until just mixed. Fold in shredded zucchini and half of the chocolate chips.
  5. Pour batter into the prepared loaf pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out mostly clean.
  7. Allow to cool before slicing.
