  • 1 cup buttermilk
  • 1 cup hot coffee
  • 8 oz semisweet chocolate (melted)
  • 2 cups heavy whipping cream
  • 6 oz bittersweet chocolate (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine eggs, vegetable oil, buttermilk, and hot coffee.
  4. Mix dry and wet ingredients until just combined.
  5. Divide the batter into prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool before preparing the mousse by melting semisweet chocolate and whipping heavy cream with powdered sugar and vanilla.
  7. Fold melted chocolate into whipped cream gently.
  8. Layer the cake with mousse in a springform pan; chill for at least three hours.
  9. Prepare ganache by heating cream and pouring it over chopped bittersweet chocolate; stir until smooth.
  10. Spread ganache over the chilled cake before serving.
